Boondi Payasa - 6 Steps

 



Boondi Payasa is a quick, rich Indian sweet made with whole milk, store-bought sweet boondi, and cardamom. 

Ingredients 

Whole milk: 1 liter 

Plain sweet boondi (unspiced/sugar-coated): 300 grams 

Sugar or condensed milk: 1/2 cup 

Ghee: 1 teaspoon 

Cashew nuts and raisins: 12 to 15 pieces 

Cardamom powder: 1/2 teaspoon 

Rose water or saffron: 1 teaspoon


Instructions 


Boil the milk in a heavy-bottom pan on a medium flame for 15 to 20 minutes until it reduces slightly. 

Add sugar or condensed milk, stir well for 1 minute, and turn off the heat. 

Let the boiled milk cool down completely to room temperature so the boondi does not melt or turn mushy. 

Heat ghee in a small pan, fry the cashews and raisins until golden brown, and set them aside. 

Add the sweet boondi, cardamom powder, fried nuts, and rose water into the cooled milk. 

Mix gently, let it rest for 15 minutes so the boondi absorbs flavor, and serve.
