Vegetables (Pumpkin, Beans, Carrot,Yam,Ashgourd),
Cumin seeds,
Green chilli,
Salt,
Turmeric,
Yoghurt,
Coconut powder/grated
Black pepper
Seasoning:
Coconut/Vegetable Oil
Mustard seeds
Method:
Cut the vegetables in equal shape (My MIL always used to tell me that the beauty in avial is that all the vegetables should be cut in proper shape & cooked). While boiling add turmeric powder and salt. When this is getting done, we can simultaneously grind the paste which comprises of Coconut powder/grated coconut, Green chilli, Cumin seeds and Black pepper. Once the vegetables are well cooked, add the ground paste and stir well. Once everything is mixed properly, season the avial. Allow this to cool for a while and then Yoghurt.
Enjoy the sour,spicy and healthy avial with hot steamed rice or chappati's.
