Uthappam - South Indian

Ingredients

Boiled rice : 250 gm
Ulutham paruppu ( black gram dal ) : 100 gm
 or 
Thuvaram paruppu ( red gram dal ) : 125 gm
Fenugreek : 25 gm
Salt : as needed
Oil : as needed

Method

Soak rice in water.
Soak ulutham paruppu and fenugreek in water.
Grind rice a little coarsely and set aside. 
Grind paruppu to a smooth batter and set aside.
Let them stand overnight.
The next day, mix both, add salt and water as needed.
Heat a flat frying pan.
Add a little oil.
Add a spoon of batter and spread into a small thick circle.
Add oil to the sides.
When one side is cooked, flip to the other side, cook and serve.

Note: if thuvaram paruppu is used, it can be soaked along with rice.
Finely cut onion, carrot, green chilli, can be sprinkle over the batter and also cooked.
