Halwa - South Indian


Ingredients

1 cup chopped apple (without skin)

1 cup chopped banana

1 cup grated carrot

1 cup milk or 1/2 cup milk powder

1 cup coconut

3/4 cup ghee

2 cups sugar

Badam Halwa - North Indian Recipe

Ingredients:

badam-1 cup
sugar-1 cup
ghee-5 tbsp
milk-1/2 cup





Method:

Soak badam in hot water for 1/2 hour and thhen remove the skin.Grind in a mimie adding milk little by little.  Grind coarsley like idly batter, to this add the sugar and then keep it on the flame.  Keep stirring the mixture till the reqrired stage[when rolled inbetween the finger it should come as a ball].  At this stage remove from fire and add the ghee little by little.  At first all the ghee will get absorbed, then it will let out the ghee.  You can add a little saffron at this stage and transfer into abowl.Delicious home made badam halwa is ready.  At first it will be little sticky but after it cools it is all set.

Carrot Halwa - North Indian Sweet

Ingredients- 

1.- Carrot (red) -1kg,
2.- Pure ghee - 4 table spoon,
3.- Milk (full cream) - 1 ltr,
4.- sugar- 300gms,
5.- Dry fruits (mixed)- 1/2 cup (almond, pista, cashew, kishmish),
6.- Cardamom powder- 1 tea spoon,

 Method -  Take  a copper bottom vessel for milk. Pour milk in it and keep for boiling. Reduce milk to less then 1/2 ltr.  Peel carrot and wash it nicely. Add carrot in this thick milk and keep boiling on low flame for nearly 35 to 40 mins.Now carrot must have become soft and milk must have absorbed. Mash the carrot very nicely  with masher and and add half the ghee in it and fry on midium flame for 10 mins. Now add sugar and keep stirring frequently so that it does not stick .Add rest of ghee and fry on high flame till it becomes totally dry . Add dry fruits and fry for another 5 mins. Add cardamom powder and off the flame in a miniute time . Gajar ka haolwa is ready to serve. It can be served in both ways hot and cool.
