Hilsha Fish - Bengali Recipe





Ingredients

Hilsha Fish - 3 Lb
Mustard seeds -  3 Tbsp
Green Chili - 9
Turmeric powder - 1.5 Tsp
Red Chili Powder -  3 Tbsp
Salt -  1.5 Tsp  or to taste
Nigella  - 0.5 Tsp

Method

1.Wash the hilsa fish thoroughly in water,remove the head  and  cut into steaks about 3/4 inch thick.

2.Remove the scales and rub a tsp of turmeric powder and 1 tea spoon of salt all over the pieces.

3. Grind  the mustard seeds, 5 green chilies and 1/2 tea spoon of salt i, adding about  1/2 cup of water.

4.Mix red chili powder and turmeric powder with 3 table-spoon of water.

5. Heat oil in a non-stick thick bottom pan and fry  kalonji and 4 green chilies for about half a minute before adding the red chili - turmeric powder mixture

6.Fry  the above stirring for about 4 to 5 minutes.

7.Add the hilsa fish pieces one by one. Turning  each piece.

8.Add the mustard paste diluted with water ( strain through a strainer so that only the juice is used ) and two green chili sliced and bring to boil adding 1/2 cup of water.

9. Reduce heat, simmer for about ten minutes till gravy thickens and continue frying carefully turning the pieced till gravy becomes little dry.

Ham and Potato Soup

INGREDIENTS:

3 1/2 cups peeled and diced potatoes
1/3 cup diced celery
1/3 cup finely chopped onion
3/4 cup diced cooked ham
3 1/4 cups water
2 tablespoons chicken bouillon granules
1/2 teaspoon salt, or to taste
1 teaspoon ground white or black pepper,
or to taste
5 tablespoons butter
5 tablespoons all-purpose flour
2 cups milk

Hyderabadi Biryani - South Indian Recipe

Ingredients 

1 kg: Meat
750 gm: Semi cooked rice
Sautéed brown onions to taste
1 tbsp: Ginger garlic paste
1 tbsp: Red chilli paste
1 tbsp: Green chilli paste
½ tbsp: Cardamom powder
3-4 sticks
Cinnamon
1 tbsp: Cumin seeds
4-5: Cloves
2 tbsp: Lemon juice
250 gm: Curd
4 tbsp: Clarified butter
A pinch: Mace
Mint leaves to taste
1 tsp: Saffron
½ cup: Water
1 tbsp: Salt
½ cup: Oil

Hakka Noodles

Ingredients
1 pound Asian Hakka noodles
1 red bell pepper thinly sliced
4 scallions - sliced diagonally (white and green parts)
1/2 cup red onion - thinly sliced
1/4 cup spring onions - just the greens
2 sp salt (or adjust to taste)
2 tbsp soy sauce
1 small packet of ready-made Schezwuan sauce mix

Home-made beef gravy

Ingredients

Beef trimmings, including offal such as kidney, liver, heart, etc.
1 onion, cut in half, one half chopped finely
8 black peppercorns
Handful of parsley leaves and stems
1 teaspoon of beef dripping or butter
1 tables spoon of plain flour
Gravy browning (optional)
sea salt to taste

Method

Place the meat trimmings, half of the onion, the peppercorns, parsley and a pint of water
Bring to the boil, reduce the heat and simmer, covered, for 1 hour
Remove from the heat and strain the stock into a separate bowl
In the same pan, melt the dripping and fry the chopped half of the onion until it is nicely browned
Stir in the flour and mix well
Little by little add the stock, stirring as you go
Add a little gravy browning if needed
Season to taste and serve immediately

Het Paa Naam Tok (Isaan-style Forest Mushroom Salad)

INGREDIENTS

Special Equipment

A charcoal grill (highly recommended), grates oiled

Mushrooms

10 ounces meaty mixed mushrooms (such as oyster, king oyster, cremini, and/or wild mushrooms), tough stems trimmed and any large mushrooms halved through the stem

A generous drizzle of vegetable oil

Kosher salt and freshly ground black pepper

Dressing

1 1/2 tablespoons lime juice (preferably from Key limes or spiked with a small squeeze of Meyer lemon juice)
1 1/2 tablespoons Thai thin soy sauce
1 tablespoon mushroom stock or water
1 teaspoon granulated sugar
1 teaspoon Phrik Phon Khua (Toasted-chile powder)
14 grams thinly sliced lemongrass (tender parts only), from about 2 large stalks (about 2 tablespoons)

Salad

1 ounce peeled small shallots, preferably Asian, or very small red onions, halved lengthwise and thinly sliced with the grain (about 1/4 cup, lightly packed)
1/4 cup coarsely chopped mint leaves (the smaller the better), lightly packed
1/4 cup coarsely chopped cilantro (thin stems and leaves), lightly packed
1 heaping teaspoon Khao Khua (Toasted-sticky rice powder) , plus a few pinches for finishing

PREPARATION

COOK THE MUSHROOMS

Prepare a grill, preferably charcoal, to cook with medium heat. Or preheat a grill pan or heavy skillet over medium heat.

Toss the mushrooms in a bowl along with just enough oil to lightly coat them. Season generously with salt and pepper and toss again. Grill the mushrooms, turning them over occasionally, until they're cooked through and deep golden brown in spots, 5 to 10 minutes, depending on the size of the mushrooms, transferring them as they're cooked to a cutting board. Cut any large mushrooms into bite-size slices, about 1/2 inch thick. Leave any small mushrooms whole. You should have about 1 cup of chopped, cooked mushrooms. Let them cool slightly as you make the dressing.#

MAKE THE DRESSING

Combine the lime juice, soy sauce, mushroom stock, sugar, chile powder, and lemongrass in a wok or medium pan, set it over medium heat, and heat the mixture just until it's warm to the touch, 15 seconds or so. Turn off the heat.

ASSEMBLE THE SALAD

Add the mushrooms to the pan along with the shallots, mint, cilantro, and rice powder, toss well, and transfer to a plate in a low heap so that most of the herbs end up near the top. Sprinkle on another pinch or two of rice powder, and serve.

Homestyle Turkey, the Michigander Way

INGREDIENTS:

1 (12 pound) whole turkey
6 tablespoons butter, divided
4 cups warm water
3 tablespoons chicken bouillon
2 tablespoons dried parsley
2 tablespoons dried minced onion
2 tablespoons seasoning salt

DIRECTIONS:

1. Preheat oven to 350 degrees F (175 degrees C). Rinse and wash turkey. Discard the giblets, or add to pan if they are anyone's favorites.
2. Place turkey in a Dutch oven or roasting pan. Separate the skin over the breast to make little pockets. Put 3 tablespoons of the butter on both sides between the skin and breast meat. This makes for very juicy breast meat.
3. In a medium bowl, combine the water with the bouillon. Sprinkle in the parsley and minced onion. Pour over the top of the turkey. Sprinkle seasoning salt over the turkey.

4. Cover with foil, and bake in the preheated oven 3 1/2 to 4 hours, until the internal temperature of the turkey reaches 180 degrees F (80 degrees C). For the last 45 minutes or so, remove the foil so the turkey will brown nicely.

Ham and Potato Soup

INGREDIENTS:

3 1/2 cups peeled and diced potatoes
1/3 cup diced celery
1/3 cup finely chopped onion

2 cups milk

DIRECTIONS:

1. Combine the potatoes, celery, onion, ham and water in a stockpot. Bring to a boil, then cook over medium heat until potatoes are tender, about 10 to 15 minutes. Stir in the chicken bouillon, salt and pepper.
2. In a separate saucepan, melt butter over medium-low heat. Whisk in flour with a fork, and cook, stirring constantly until thick, about 1 minute. Slowly stir in milk as not to allow lumps to form until all of the milk has been added. Continue stirring over medium-low heat until thick, 4 to 5 minutes.
3. Stir the milk mixture into the stockpot, and cook soup until heated through. Serve immediately.
