Mysore Rasam - South Indian

Ingredients

for mysore rasam masala powder:

2 tsp coriander seeds / daniya seeds
½ tsp cumin seeds / jeera
2 tsp chana dal
½ tsp black pepper / kali mirch
2 dried kashmiri red chilli
¼ cup coconut, fresh / desiccated / dry

other ingredients:

2 medium sized tomatoes, finely chopped
1 cup tamarind juice
few curry leaves
¼ tsp turmeric powder / haldi
salt to taste
½ tsp jaggery, optional
1 cup cooked toor dal
2 cups water, add as required

for tempering:

2 tsp oil
¾ tsp mustard seeds / rai
generous pinch hing / asafetida
2 dried red chilli
few curry leaves
2 tbsp coriander leaves, finely chopped

Chakli recipe



Ingredients

1 cup rice flour (chawal ka atta)
½ cup besan (gram flour)
2.5 tablespoon oil or softened butter
⅔ to ¾ cup water - add as required
¼ teaspoon turmeric powder (haldi)
½ teaspoon ajwain (carom seeds)
½ teaspoon cumin seeds (jeera)
1 teaspoon red chili powder or add as required (lal mirch powder)
a generous pinch of asafoetida (hing) - optional
1 tablespoon sesame seeds - white or black (safed til or kala til)
oil for deep frying
salt as required

Kulfi - North Indian





Ingredients

Milk                                         1 liter
Sugar                                       150 gms
Saffron                                     a large pinch
Pistachio nuts                            20 nos
Almonds                                   20 nos
Cardamoms                              4 nos
Rose syrup                               for flavoring

Sandesh





Ingredients 

1 cup Paneer (Cottage cheese)

1 cup sugar

2  table spoon lemon juice

1/2 tsp rose essance

Sliced pistachios and almonds for garnish

Procedure

Boil Milk, once the milk comes to a boil add the lemon juice.  The milk will start curdling. Remove from fire and pour the curdled milk into a muslin cloth and drain out all the excess water ( for better results, hang the muslin cloth for 2 or 3 hrs).  

Once all the water drains out, remove paneer from the muslin cloth. 

Heat a pan, add the paneer and sugar. Keep stiring for 10 mins until the suger gets completely mixed with paneer. Add the rose essence.

Remove from fire and pour this into a butter coated plate. After the mixture cools down make them into round balls. Decorate the top with sliced pistachios and almonds.

Sandesh is ready to be served.

Hilsha Fish - Bengali Recipe





Ingredients

Hilsha Fish - 3 Lb
Mustard seeds -  3 Tbsp
Green Chili - 9
Turmeric powder - 1.5 Tsp
Red Chili Powder -  3 Tbsp
Salt -  1.5 Tsp  or to taste
Nigella  - 0.5 Tsp

Method

1.Wash the hilsa fish thoroughly in water,remove the head  and  cut into steaks about 3/4 inch thick.

2.Remove the scales and rub a tsp of turmeric powder and 1 tea spoon of salt all over the pieces.

3. Grind  the mustard seeds, 5 green chilies and 1/2 tea spoon of salt i, adding about  1/2 cup of water.

4.Mix red chili powder and turmeric powder with 3 table-spoon of water.

5. Heat oil in a non-stick thick bottom pan and fry  kalonji and 4 green chilies for about half a minute before adding the red chili - turmeric powder mixture

6.Fry  the above stirring for about 4 to 5 minutes.

7.Add the hilsa fish pieces one by one. Turning  each piece.

8.Add the mustard paste diluted with water ( strain through a strainer so that only the juice is used ) and two green chili sliced and bring to boil adding 1/2 cup of water.

9. Reduce heat, simmer for about ten minutes till gravy thickens and continue frying carefully turning the pieced till gravy becomes little dry.

Noodles Vegetarian

Maggi noodles - 2 pockets
Green gram sprouts - 200 gms
Black channa sprouts - 200 gms
Roasted Peanuts - 2 tbsp
Capsicums - 2
Onions - 2
Grated fresh coconut - 4 tbsp
Green chillies - 4
Chilli powder - 1 1/2 tsp
Masala noodels - 1 pocket
Coriander leaves - 4 tbsp
Curry leaves - 3 sprigs
Lemon - 1
Mustard seeds - 1 tsp
Oil - 5 tbsp
Salt to taste

Chocolate Truffle

Ingredients:

200 ml/1 cup heavy cream (I used Amul Fresh Cream)

1 tbsp butter

225 gms finely chopped dark bitter sweet chocolate (I used Morde brand -100 gms milk chocolate and 125 gms dark chocoalate)

cocoa powder OR chopped toasted nuts of your choice OR desiccated coconut OR icing sugar OR chocolate rice for dusting

Method

1 Heat a pan, add butter and fresh cream. Bring to a boil (as bubbles appear along the edges of the vessel) turn off heat.
2 Place chopped chocolate in a stainless steel vessel. Pour the cream over grated chocolate and let it stand for 3 mts. Use a whisk to gently stir till smooth. (Do not beat). Bring to room temperature.
3 Cover the stainless steel vessel with a cling wrap and place in the refrigerator. Allow to set till firm for 4 hours or overnight.
4 Place a little cocoa powder or desiccated coconut or icing sugar or chopped nuts like pistachios/almonds in a plate.
5 Remove the cling wrap off the stainless steel vessel, use a melon scoop or spoon to remove the chocolate and make small balls. Dust your hands with cocoa powder while rolling the balls so that they do not stick to your hands.
6 Roll the truffles in the coating of your choice. Shake truffles in a sieve to eliminate excess cocoa if using cocoa to dust. Place them on parchment/butter paper lined plate, cover and refrigerate the truffles.
7 At the time of serving bring them to room temperature. Store in an air tight container in the fridge.
