Hilsha Fish - Bengali Recipe





Ingredients

Hilsha Fish - 3 Lb
Mustard seeds -  3 Tbsp
Green Chili - 9
Turmeric powder - 1.5 Tsp
Red Chili Powder -  3 Tbsp
Salt -  1.5 Tsp  or to taste
Nigella  - 0.5 Tsp

Method

1.Wash the hilsa fish thoroughly in water,remove the head  and  cut into steaks about 3/4 inch thick.

2.Remove the scales and rub a tsp of turmeric powder and 1 tea spoon of salt all over the pieces.

3. Grind  the mustard seeds, 5 green chilies and 1/2 tea spoon of salt i, adding about  1/2 cup of water.

4.Mix red chili powder and turmeric powder with 3 table-spoon of water.

5. Heat oil in a non-stick thick bottom pan and fry  kalonji and 4 green chilies for about half a minute before adding the red chili - turmeric powder mixture

6.Fry  the above stirring for about 4 to 5 minutes.

7.Add the hilsa fish pieces one by one. Turning  each piece.

8.Add the mustard paste diluted with water ( strain through a strainer so that only the juice is used ) and two green chili sliced and bring to boil adding 1/2 cup of water.

9. Reduce heat, simmer for about ten minutes till gravy thickens and continue frying carefully turning the pieced till gravy becomes little dry.

Pomfret Fry





Ingredients

Mix 3- 4 tsp of ginger –garlic paste, 1-2 tsp red chili powder, ½ tsp turmeric, ½ pepper powder, 1tsp fish masala (optional), and 1-2 tsp salt.

Karimeen Fry - Kerala Style

Ingredients

Pearl spot fish cleaned and gashed - 4
Red chilly paste or dry chillies - 10 gm
Turmeric powder - 1/2
Coriander powder - 10 gm
Garlic -5 flakes
Ginger paste - 10 gm
Lemon juice - 1 no
Pepper - 1/2 spoon
Small red onion - 5 or 6
Salt - As reqd
Curry leaves - 1 sprig

Fish Rolls - North Indian

Ingredients:

500 g salmon
3 boiled potatoes, cut into small pieces 
2  onion chopped 
200 g leekschopped 
6  fresh curry leaves
3 tsp black pepper 
1/2 tsp turmeric powder 
100 g breadcrumbs 
2 cups all-purpose flour 
2  green chilies chopped 
2  eggs 
oil to fry
salt to taste
water as required

Method:

1. Heat Oil in the pan Add onions, curry leaves, green chillies and leeks to it. Fry onion till golden brown colour.
2. Add salt, Peeper and turmeric powder. Mix Well.
3. Add fish mix well and remove from heat.
4. Add potato and mix well.
5. To make patry, mix the flour, a pinch of turmeric power, salt, egg and water mix well and make the thick batter.
6. In flat frying pan, prepare pancake with this batter.
7. Put the fish mixture in the middle of these pancakes and roll them out neatly.
8. Beat the other egg and dip the roll completely in it.
9.Then roll these in breadcrumbs and fry until golden brown.

Bengali Fish Curry - Indian Curry Recipe

Ingredients:

2 tblsp lemon juice2 tbsps.
mustard oil for frying
salt to taste 
8 fish fillets8 
1 tblsp red chilli powder
4 red chillies whole
salt to taste 
1 tsp mustard paste
1 tsp turmeric powder
4 green chillies slit
2 tblsp coriander powder
1 tblsp garlic paste
1 tsp mustard seeds
1 bay leaf
2 cup onions chopped
1 tblsp ginger paste
1 tsp turmeric powder
1 tsp onion seeds (kalonji)


How to make bengali fish curry :
Clean and cut fish fillet, wash well, remove excess water and then marinate with limejuice, turmeric powder and salt.
Keep aside for 30 minutes.
Heat up a pan, mix in 1 tblsp oil, shallow fry marinated fish from both sides until slightly browned.
Take off and keep aside.
Heat up remaining oil, mix in mustard seeds, kalonji, whole dry red chillies and bay leaf, stir fry for a few minutes till seeds crackles, mix in ginger, garlic paste and stir fry again for a moment.
Mix in cut onion and stir fry until slightly brown in colour.
Mix in mustard paste, red chilli powder, coriander powder and turmeric powder, stir fry masala nicely until oil starts separating.
Adjust water and salt, bring to boil and then mix in shallow fried fish, put green chilli slits on top.
Stir fry on a slow flame until fish get cooked and oil starts floating on top of gravy.
Take off and decorate with cut green coriander leaves.

Fish Fry -

STEP 1- MARINADE FISH PIECES WITH LITTLE SALT,TURMERIC,CHILLI POWDER,LITTLE LEMON JUICE.

STEP-2: PLACE THE MARINATED FISH ON FRYING PAN AND ADD LITTLE OIL. FRY BOTH SIDES FOR 10 MIN.

SERVE HOT IN A PLATE.GARNISH WITH CORIANDER LEAVES.

Fish Curry - South Indian

Ingredients

To serve 6 -8  persons

Pomfret or any other fish (meen)    :    2
Coconut     :    1
Garlic    :    6 pods
Poppy seeds    :    2 tbsp
Coriander seeds    :    1 tbsp
Curry leaves    :    a few
Dry red chilli    :    6
Cumin    :    1 tsp
Sesame    :    1 tbsp
Salt    :     1 dessert spoon
Lime juice    :    juice of two limes



Method

Cut fish into pieces, smear salt and set aside.
Grate coconut and grind with all the other items except,curry leaves and lime juice to a fine paste.
Cut onion finely.
Heat ½ cup oil in a frying pan.
Add onion and fry till they are golden.
Add ground coconut,curry leaves and fry till oil floats above.
Add 2 cups of water,salt and when it starts boiling,add fish pieces and boil till the fish is cooked.
Add lime juice and serve.
