Chicken Cafreal - South Indian

Ingredients:

Chicken - 1 no
Lime juice - 1 tsp
Salt - 1 tsp levelled
Dry red Kashmiri chillies - 5
Green chillies - 3 
Peppercorns- 4 
Coriander seeds- 1 tbsp
Cinnamom - 1/2 piece
Mace - 1/2 
Garlic pods - 8 
Ginger - 1 piece


Method:

1. Rub the salt and lime juice over the chicken. Grind all the other ingredients together and rub over the chicken.
2)Cover and marinate it overnight in the refrigerator.
3)Heat oven to 325F. Place the chicken in a roasting tray and cover with foil. For the
last 15 minutes of cooking, remove the foil.
4) Remove the chicken from the roasting tray and leave to rest.
