Kajjikayalu

Ingredients

• 1 cup wheat flour 
•  ½ cup maida 
•  2 cup rava 
•  ghee to roast 
•  oil to fry 
•  1 cup khoya 
•  1 cup milk 
•  3 cup sugar powder 
•  1/4 cup dried coconut 
•  pinch of salt 
•  1 tsp cardamom powder 


Directions

1.  In one bowl mix 1 cup rava & maida, add pinch of salt, 1 tsp ghee & 2 tsp khoya.mix it &  make dough by adding milk in it.keep it aside for 1-2 hour.(this dough is use as a covering for karanji)   
2. Heat a thick based pan with 4-5 tsp ghee. now add 1 cup rava & wheat flour in ghee. roast it 10-15 min on low heat then remove it from fire & let it cool.   
3. Once it get cool add khoya & mix it, then add sugar, cardamom powder, coconut & .(this is a filler for karanji)    
4. Make a small balls (about 15) of dough & roll them in a small puri. place a spoon of mixture at a center  of puri & fold it in a half, stick a folded sections with each other very close to filled mixture(if needed touch it with water). with a cutter cut the excess dough.stuff all the karanji.    
5. Heat a kadhai very hot with ghee & fry all karanji till turns to golden brown.    
6. Karanji can store 15 to 20 days in a air tight container.

Mirapakaya Bajji - Vegetarian

INGREDIENTS—

Green chilies-- 200 Gms (fat the one required to make bajji’s)
Onion – 1 finely chopped
Ginger garlic paste—2 tsps
Salt – as required
Pepper powder- 1/2 tsp
Besan- 1 cup
Corn flour- 1/2 tsp
Oil- for frying
Ground nut-10 Gms (fried)
Ajwain- 2 tbsp (Ground)

PROCEDURE—

First wash fat green chilies and then cut it horizontally and then remove all the seeds inside. Take a kadai and heat oil, and fry  ginger garlic paste, salt, pepper powder, dhania powder, and ajwain. Cook for 2 mins and then remove. Meanwhile chop an onion and keep it aside. Now take the fat green chilies and stuff it with the above prepared mixture and fry it in oil.

SERVING TIPS-

 Serve hot with onions and fried ground nut with a dash of lemon juice, salt and red chilly powder.

Gongura Pachadi - Indian Cooking Recipe

Ingredients

2 cups gongura leaves

1 tsp tamarind juice

1 tsp salt (rocksalt)

1 tsp oil

12 small onion peeled

1 cup big onion diced

20 red chillies

fry in oil and powder:

20 red chillies

1 tsp dhania

2 tbsp urad dhal

1 tbsp sesame seeds

1/2 tbsp cumin seed

Method

Wash gongura leaves, fry in a pan with little oil

Close the pan with a lid, cook for a while

Add tamarind juice

Using a pestle, pound the cooked leaves

Add salt, 1/4 tbsp sugar, all powdered ingredients till every thing blends well

Season with mustard

Add onions

Mix with 1 cup of boiled water

Gongura pachadi is to serve

fry in oil and powder:

20 red chillies

1 tsp dhania

2 tbsp urad dhal

1 tbsp sesame seeds

1/2 tbsp cumin seed
