Modak




Ingredients

 1 cup rice flour 
 1 cup water 
 1 teaspoon oil 
 oil for greasing 
 a pinch of salt 

For the filling

 1 cup grated jaggery (gur) 
 1 cup greated fresh coconut 
 ½ teaspoon cardamom (elaichi) powder 
 1½ tablespoons ghee

Vada Pav - Maharashtrian Recipe




Ingredients

Pav Bun - 4
Potaoes - 5
green chilies - 7
garlic and ginger paster - 3 tsp
curry leaves - 5
tumeric powder a pinch
mustard seeds - 1 tsp
dal flour
chili powder -2 tsp

Pav Bhaji - Chaat Recipe

Ingredients

·  Potatoes - 1/4 kgs

·  Green peas - 100 gms

·  Cauliflower - 1/2 or cabbage - 200 gms

·  Capsicums - 2

·  Tomatoes - 3 big

·  Onions - 2

·  Turmeric powder - 1/2 tsp

·  Chilli powder - 1/2 tsp

·  Pav Bhaji masala powder - 1 tbsp

·  Dhania - 1/2 tsp

·  Butter - 50 gms

·  Garlic paste - 2 tsp

·  Salt to taste

·  Coriander leaves - 1 tbsp (chop finely)


Pav Bhaji Masala

Step 1: Cut all vegetable into pieces and except potatoes and peas.


Step 2: Pressure cook vegetables, potatoes, peas. Do not cook capsicums.


Step 3: Peel and mash the potatoes keep aside.


Step 4: Cut onion and tomatoes finely.


Step 5: Heat butter in a shallow pan, fry the onions and garlic paste. Add tomatoes and chopped capsicums, fry till it is mash properly.


Step 6: Add mashed potatoes, other cooked vegetables, salt and all the spicy powders and add little water.


Step 7: Cook and mash thoroughly when it is boiling.


Step 8: When the mashed gravy becomes hard thick, add a blob of butter, sprinkle chopped onione and coriander leaves.


Step 9: Serve hot with buttered pav bread with lemon pieces. (Cut bun horizontally into half. Put butter on a tawa and melt. Apply inside and both outsides).

Vada Pav - Maharashtrian Recipe

Vada Pav
Ingredients

Pav Bun - 4
Potaoes - 5
green chilies - 7
garlic and ginger paster - 3 tsp
curry leaves - 5
tumeric powder a pinch
mustard seeds - 1 tsp
dal flour
chili powder -2 tsp

Method

Boil the potaoes ( not very soft) and smash it up roughly not a smooth paste.  Take the green chilies and garlic and ginger paste and grind it to a smooth paste in a mixer. Then in a kadai take some oil add mustard and wait for it to splutter. Add ground paste in the kadai and fry it well till the raw smell goes away.  Now add the potatoes and fry it for some time till the paste mixes with the potatoes. The let it cool and form small round balls with them. Then take the dal flour and mix with water to a thick paste, add chili powder and little salt to it .  Dipt the potatoe balls in it and deep fry it . 

Tale the Pav buns and cut in the middle and put one potatoe ball in it along with the chutney ( recipe mentioned below ) and put some butter on the pav and put it in the microwave or on a pan and heat it .  Now it is ready to serve.

Mint - Coriander Chutney Recipe

Ingredients


1 bunch fresh mint
1 bunch fresh coriander

garlic 2 pods

1" piece of ginger

4 green chillies

1/2 tsp salt

2 tsps lime juice

Method 

Take the mint , coriander, garlic and ginger green chillies. was h it and grind it. Grind these ingredients into a smooth paste in a mixer. You can add this paste inside the pav before you can microwave or heat it.
