Amaranth - Leaf vegetable

Amaranthus, collectively known as amaranth, is a cosmopolitan genus of annual or short-lived perennial plants. Some amaranth species are cultivated as leaf vegetables, pseudocereals, and ornamental plants. Most of the Amaranthus species are summer annual weeds and are commonly referred to as pigweed. Catkin-like cymes of densely packed flowers grow in summer or autumn. Approximately 60 species are recognized, with inflorescences and foliage ranging from purple, through red and green to gold. Members of this genus share many characteristics and uses with members of the closely related genus Celosia.

Cyclanthera pedata - Achocha - Vegetable



Cyclanthera pedata, locally known by its Quechua names kaywa or achuqcha(also spelled achocha, achogcha, achojcha, achokcha, archucha), is a herbaceous vine grown for its edible mature fruit, which is predominantly used as a vegetable. Kaywa is known from cultivation only, and its large fruit size as compared to closely related wild species suggests that it is a fully domesticated crop. Its use goes back many centuries as evidenced by ancient phytomorphic ceramics from Peru depicting the fruits. It is also known as slipper gourd, lady's slipper, sparrow gourd , pepino in Colombia, stuffing cucumber in English.

Cranberry

A cranberry is a fruit. It grows on evergreen dwarf shrubs. Cranberries are in the genus Vaccinium, and its subgenus Oxycoccus. In some classification methods, they are regarded as a genus in their own right.

Cranberry plants grow in acidic bogs in cooler areas of the northern hemisphere. They are low creeping shrubs up to seven feet long, from two to eight inches high. They have slender and wiry stems with small leaves which are evergreen with dark pink flowers. Cranberries are usually eaten during Thanksgiving in the United States. They are also eaten in Europe and some parts of South America

Spinach

It is an annual plant (rarely biennial), which grows up to 30 cm tall. Spinach may survive over winter in temperate regions. The leaves are alternate, simple, ovate to triangular, and very variable in size from about 2–30 cm long and 1–15 cm broad, with larger leaves at the base of the plant and small leaves higher on the flowering stem. The flowers are inconspicuous, yellow-green, 3–4 mm in diameter, maturing into a small, hard, dry, lumpy fruit cluster 5–10 mm across containing several seeds.

Garlic

Allium sativum, commonly known as garlic, is a species in the onion genus, Allium.

Its close relatives include the onion, shallot, leek, chive, and rakkyo. With a history of human use of over 7,000 years, garlic is native to central Asia,and has long been a staple in the Mediterranean region, as well as a frequent seasoning in Asia, Africa, and Europe. It was known to Ancient Egyptians, and has been used for both culinary and medicinal purposes.

Dates

The fruit is known as a date. The fruit's English name (through Old French), as well as the Latin species name dactylifera, both come from the Greek word for "finger", dáktulos, because of the fruit's elongated shape. Dates are oval-cylindrical, 3–7 cm long, and 2–3 cm (0.79–1.18 in) diameter, and when ripe, range from bright red to bright yellow in colour, depending on variety. Dates contain a single stone about 2–2.5 cm (0.79–0.98 in) long and 6–8 mm (0.24–0.31 in) thick. Three main cultivar groups of date exist: soft (e.g. 'Barhee', 'Halawy', 'Khadrawy', 'Medjool'), semi-dry (e.g. 'Dayri', 'Deglet Noor', 'Zahdi'), and dry (e.g. 'Thoory'). The type of fruit depends on the glucose, fructose and sucrose content.

Onion -

The onion , also known as the bulb onion or common onion, is a vegetable and is the most widely cultivated species of the genus Allium.

This genus also contains several other species variously referred to as onions and cultivated for food, such as the Japanese bunching onion (A. fistulosum), the Egyptian onion (A. ×proliferum), and the Canada onion (A. canadense). The name "wild onion" is applied to a number of Allium species, but A. cepa is exclusively known from cultivation. Its ancestral wild original form is not known, although escapes from cultivation have become established in some regions. The onion is most frequently a biennial or a perennial plant, but is usually treated as an annual and harvested in its first growing season.
