Vermicelli Rava Idli(Shavige Rava Idli) -



Vermicelli Rava Idli(Shavige Rava Idli) 

1. Roast: Dry roast 1 cup of rava and 1 cup of shavige (vermicelli) separately until they turn aromatic/golden, then let them cool. 

2. Tempering: Heat 1-2 tbsp oil, add mustard seeds, urad dal, chana dal, chopped cashews, green chilies, ginger, and curry leaves. Sauté well. 

3. Mix: Combine the roasted rava, shavige, tempered spices, 1 cup of curd, 1/2 cup water (or as needed), and salt. 

4. Rest: Let the batter rest for 10-20 minutes to allow the rava to absorb the moisture. 

5. Steam: Add a pinch of baking soda or Eno for extra fluffiness (optional), mix, and immediately pour into greased idli plates. Steam for 8-10 minutes.

Idli - South Indian Recipe

Ingredients

Boiled rice : 500 gm
Uluththam paruppu ( black gram dal ) : 125 gm
Salt : as needed
Cooking soda : ¼ tsp






Method

Soak boiled rice and uluththam paruppu in water for 3 hours.
Grind rice a little coarsely and uluththam paruppu into a soft batter.
Mix both, add salt, stir well and leave it overnight.
In the morning, mix soda and pour batter in the idli plate.
Steam idlis for 10 minutes.

Carrot Rava Idli



Ingredients:

1 cup semolina/rava (preferably coarse)
1 teaspoon salt
1 or 2 finely chopped green chillies
1 teaspoon finely grated ginger
2 tablespoons chopped corriander
1/2 cup grated carrots
1/2 cup thick yogurt
1 cup water
1 tablespoon ENO fruit salt

For Seasoning : 

2 tbsp oil
1/4 teaspoon mustard seeds
1/4 teaspoon cummin seeds
2 green chillies
curry leaves

Method:

1. Mix all the ingredients except the ENO fruit salt.
2. Put water in a pressure cooker and keep on a slow fire. 
3. Apply a little oil to each of the idli container to ensure easy removal when they are done. 
4. Add ENO fruit salt to the batter, mix and immediately steam in the pressure cooker (without the whistle for 6-10 minutes — with Us Hat.

Jackfruit Sweet Idlis - Panasa Dhodak

Ingredients:

1 cup or 7 whole pieces jack fruit pieces
1/2 cup grated fresh coconut
1 cup fine rava
1/2 cup to 3/4 cup grated jaggery, acc to taste
1/2 to 1 cup water
pinch of salt



Method-:

1. Dry roast Rava on light heat till nice aroma comes. approx 10 min. keep it aside to cool.
2. Steam Rava for 20 min, by wrapping the rava in a clean cloth.
3. Meanwhile make a smooth paste by blending jackfruit peices and grated coconut in a mixi.
4. Mix the ground paste with jaggery , rava and salt evenly.
5.You may add water to the batter to make the batter dropping consistency, but consistency is a drier in comparison with idli batter.
6. Keep the batter aside for 15 min.
7. Steam for 15- 20 min.
8. Serve with a spoonful of ghee.
