Idli - South Indian Recipe

Ingredients

Boiled rice : 500 gm
Uluththam paruppu ( black gram dal ) : 125 gm
Salt : as needed
Cooking soda : ¼ tsp






Method

Soak boiled rice and uluththam paruppu in water for 3 hours.
Grind rice a little coarsely and uluththam paruppu into a soft batter.
Mix both, add salt, stir well and leave it overnight.
In the morning, mix soda and pour batter in the idli plate.
Steam idlis for 10 minutes.

Masala Idli

Ingredients

Idli batter
Curry leaves and coriander leaves handful chopped finely.
Grated Carrot, Boiled peas
Grated Ginger 1 tsp
Finely chopped green chilli
Oil or Ghee 1 tsp
Mustard, Urad dal, Channa dal for seasoning.
Hing/turmeric powder little


Method

Mix Idli batter,3/4 of grated Carrot, Peas, Curry leaves, Coriander leaves, Chopped ginger and stir well

Heat oil and season with Mustard, Urad dal, Channa dal and Hing, pour the seasoning over Idli batter and mix gently.

In a greased Idli plate, sprinkle remaining grated Carrot on each pit and on top of it pour Idli batter

Steam till the Idli is cooked.

Rava Idli - South Indian

Ingredients

Rava ( semolina ) : ½ kilo
Sour curd : ¼ kilo
Cumin : ½ spoon
Ghee : 6 spoon
Salt : as needed
Coconut : ½ 
Green chilli : 5
Ginger : a small piece
Curry leaves : a little
Peppercorn   : ½ spoon

Method

Grate coconut.
Cut green chilli, ginger finely.
Heat a little ghee in a frying pan.
Add rava and fry till red.  
Cut cashew into pieces. 
Heat a little ghee in a frying pan.
Add cumin, peppercorn, cashew and fry till red.
Add ginger, curry leaves, fry and set aside.
Churn curd.
Mix coconut, green chilli, rava and fried items.
Leave it aside for 2 hours. 
Add fried rava, 2 spoon ghee and stir well.
Prepare idlis.
