Masala Dosa - South Indian Recipes
Ingredients:
Dosa shell:
1 1/2 cups rice
1/2 cup urad dal
salt to taste
Oil
Masala Filling:
2 large potatoes
1 medium onion (chopped)
1/2 teaspoon yellow split peas
1/2 teaspoon mustard seed
1/2 teaspoon turmeric
1-2 green chili
1 tablespoon oil
salt to taste

Paneer Dosa
Ingredients:
Panner-250 gm
Onion-2
Tomato-2
Green chilly -1
Ginger garlic paste - 1 tsp.
Garam Masala -1 tbsp
Chilly powder -1 tsp
Coriander powder-1 tbsp
Coriander leaves
Salt as per taste.
Preparation:
Grate the Panner.
Heat oil in pan add onion fry it nicely after that add chilly,tomato, ginger garlic paste and fry till raw smell gets vanished.
Now add Chilly powder, coriandr powder, garam masala.
Add the grated panner and fry till the masalas get blended nicely.
Finally garnish with coriander leaves. stuffing part is ready.
Now make dosas in pan once you find the brownish color(crsipy stage) of dosas spread the panner stuffing on top as thin layer now fold the dosas and serve hot.

Rava Dosa - Indian Recipe
Ingredients
Ravai ( semolina ) : 200 gm
Rice flour : 100 gm
Buttermilk : 100 ml
Green chilli : 4
Cumin : ½ tbsp
Salt : as needed
Curry leaves : a little
Oil : as needed
Method
Cut green chilli finely.
Sieve ravai and rice flour.
Mix ravai and rice flour in a vessel.
Add buttermilk, cumin, salt, water and mix well.
Leave it aside for a minimum 2 hours.
Heat a flat frying pan.
Smear oil on the pan.
Pour a spoon of batter on the pan from the edges to the centre.
Pour oil around the dosai.
When the bottom side is cooked, flip to the other side and cook.

Set Dosa - South Indian
Ingredients:
Raw rice - 4 cups
Rice flakes (Pressed rice) - 1 cup
Black gram (Urad dhal) - 1/2 cup
Salt to taste
Method:
1. Soak the rice, urad dhal (Black gram) and rice flakes (pressed rice) together in water for at least 6 to 7 hours, wash well.
2. Grind the soaked ingredients to a smooth paste. Add enough water to obtain a smooth and a thin batter add salt to taste, stir it.
3. Keep aside for at least five to seven hours.
4. Heat a dosa tawa, lightly grease it and pour ladleful thin batter over it and spread it in circular fashion and thick dosa.
5. Cook till done (one side only) and don't fold the dosa after cooked.
6. While serving the dosa, decorate 1 tsp of fresh butter over the dosa and serve hot with vegetable sag or coconut chutney.

Mix together, add salt with water to make batter.
Leave in room temperature overnight.
Mix onion and chilies to the thin batter.
Heat pan or griddle with little ghee or oil.
Spread the mix on pan in circular motion to make thin Dosa.
Cook on both the sides.
Masala Filling (Spicy Filling):
Heat oil.
Add mustard seed, peas, onions and spice.
Fry for about 5 minutes on medium heat until onions are turned into golden brown.
Add potatoes and mix and cook some more.
Add filling inside Dosa and roll.

Puffed Rice-Rice Dosa - South Indian Recipes
INGREDIENTS:
Raw rice 1 glass
Puffed rice 1 1/2 glasses
Method
Wash the raw rice well and soak in butter milk for half an hour.
Soak the puffed rice for 15 minutes.
Grind the rice using the buttermilk. Grind the puffed rice. Mix both. Add salt.
The batter should be of medium consistency.
Keep aside for two hours before making the dosas.
